I really never thought this part of my life would make for any kind of good writing. I fact, I tried to keep club promotion and bartending very separate from my creative life. Almost ten years later, I'm beginning to realize how valuable these subcultures are. Much of So Say the Waiters is about creating cultures of your own. That' exactly what we were aiming to do with Taxidermy Lodge (Taxlo). It was our own culture and economy, our own art and entertainment. We controlled it. We loved it.
